Denver’s Highlands neighborhood gets vegan Indian food options

The manager of an Indian food restaurant in Denver's Highlands neighborhood says they updated their menu and ingredient choices after seeing the growth in Denver residents' demand for vegan and vegetarian options.

(firmenpresse) - The manager of an Indian food restaurant serving customers in Denvers Highlands neighborhood says when vegans and vegetarians look at restaurant options, theyre often disappointed by the options available.

Denver residents are demanding more vegan and vegetarian options in Denver so Himchuli, Denver's newest place for Indian food, intends to satisfy that growing trend, with a menu that boasts over fifteen vegan dishes, and over twenty vegetarian options.

Chase Thomas, the general manager, says "Denver's Highlands community is full of socially, and environmentally conscious residents who have been in need of a restaurant that respects their values, while offering a variety of exotic dishes and new flavors, and we intend to be that restaurant."

Himchuli recently updated both their full menu, and their lunch buffet, by increasing the number of vegan and vegetarian options. Thomas says, We now have anywhere between two and four hot vegan options each buffet, which rotates daily. In addition, theres a fresh salad bar with mixed greens and fruit. The lunch buffet comes with complementary vegetarian-friendly naan. Whole wheat Vegan-friendly roti is also an option.

Some dishes are classic Indian staples with a twist to make them vegan friendly. For example, traditionally the Saptarangi Korma gets its creaminess from whole cream, but were offering the same authentic flavor with a new coconut milk substitution, adding a dimension that compliments the sauce surprisingly well. This allows people who are vegan, vegetarian, or simply lactose intolerant, to indulge.

Thomas expects that more restaurants in Denver will start to offer vegan options as more residents start to demand it. It takes some time for the market to catch up but because were such a new restaurant, we get to experiment and iterate on our offerings quickly.
