France’s Provence region has an array of interesting cuisine on offer, best explored through the French river cruises which frequent the area.

Made with at least four different types of bony Mediterranean fish, this delectable soup is flavoured with various local herbs and spices. Its stock is enriched with chopped garlic, onions, tomatoes and saffron, while the soup itself is served with generous amounts of croutons and rouille.

Calisson

Another destination which is easily accessed by French river cruises is Aix-en-Provence, home to the famed calisson. Well-loved by those with a sweet tooth, it is a specialty made of candied fruit paste, topped with powdered almonds and royal icing. It has been widely made in Provence since at least the seventeenth century, although many believe it was around during the mid-fifteenth century at the second wedding of King Rene of Anjou. It’s truly impressive that even hundreds of years later, this luxurious sweet is still a delicious hit with the public. It’s definitely something to add to your gastronomic bucket list.

Ratatouille

This tongue twister became a household name with the release of the popular animated film named after it. However, along France’s Mediterranean coast, it has been a firm favourite for decades. Originating in sunny Nice, it is a colourful vegetable stew made of aubergines, onions, courgettes and peppers sautéed in garlic, with tomatoes added last. It is a popular summer choice amongst both locals and visitors to the area, and just a mouthful of this humble dish contains a range of interesting flavours and textures.
