Annually the kitchenproduces hundreds of new recipes, in which high-quality andlow-priced Pirkka products have an important role to play. Consumershave always valued tested and reliable recipes. Today the key wordsare fast, easy and healthy cooking - not forgetting taste.The first recipes were for baking cakes to accompany coffee offeredat store events. Over the years the test kitchen has produced nearly4,000 food recipes and new ones are generated at the annual rate ofsome 900 - more than two for every day of the year. "The most popularrecipes of all times are a layer cake à la K-store and a bakedrainbow trout. With the help of tested and reliable recipes, we wantto help consumers find the best food ideas and solutions," says HomeEconomist Leena Korkalainen.The 'big picture' in providing recipes has changed a lot over theyears. "Now the large number of ingredients and their goodavailability is also reflected in more versatile recipes. Specialdiets have also increased and our food culture is being influenced bycultures from all over the world. For its own part, the Pirkka testkitchen has made Finnish people familiar with new products; recipesintroduced them to the Pirkka pesto sauce, for example," says LeenaKorkalainen.Recession has affected Finnish cooking. "Now people tend to choosemore basic ingredients. We have met this challenge by making recipesbased on each season's ingredients, which are at their best and theprices are low," says Leena Korkalainen.There are five home economists and two students of home economics inthe Pirkka test kitchen. Consumers have access to the recipes createdby them on the food pages of Pirkka.fi web site and the Pirkkamagazine, in the food programme 'What are we having today?', and onPirkka product packages.The Pirkka test kitchen is part of Kesko Food's Pirkka ProductResearch Unit, whose laboratory is the only one in Finlandrepresenting store brands with the international ISO 17025accreditation. The laboratory is responsible for quality assurance ofall Pirkka products.Food retailing trends find their way to recipes"Food retailing trends also affect the recipes. We have to be able totake consumers' increasingly varying needs into account whendeveloping new recipes. An important trend is, for example,experiences and new items. People look for cooking ideas andinspiration from recipes and grocery stores. They are interested innew product releases, and recession has not made them less willing toexperiment. K-food stores meet this demand by offering changing,interesting new items and recipes garnished with new ideas," saysCommercial Director Jukka Koivunen.Current trends in food retailing are: * Experiences and new products: People look for cooking ideas and inspiration from recipes and grocery stores. They are interested in new product releases, and recession has not made them less willing to experiment. * Gourmandise and indulgence: To counterbalance fast and easy cooking on weekdays, many families like to cook and enjoy meals together on weekends. Gourmandise and indulgence is something shared by families and friends. * Healthiness and wellbeing have been on top of the list for long. Overweight is a global topic and weight control has become a clear megatrend. Taking care of yourself in other ways, too, offers a counterbalance to time-pressed consumers. * Responsibility, for example Fairtrade and organic products, have maintained their position despite recession, because their clientele is very loyal. The enhancement of the Pirkka range has also made them more accessible to ordinary consumers.
